Job Description Reporting directly to the Executive Chef or designate, the Captain Server is accountable to support the service staff in all aspects of hospitality style dining room service. Including serving tables as required.
The Captain Server is required to perform their duties in a manner consistent with the core values and employee guiding principles, ensure resident safety and demonstrate customer service excellence.
DUTIES AND RESPONSIBILITIES:
· The Captain Server supports the Food and Beverage activities within the home and in particular supports the service staff both in the Main Dining Room, Second Floor assisted dining room and functions, and will take a section or pick up tables when necessary
· Schedules, monitors and maintains the schedule and will adjust the schedule to ensure proper coverage in the food and beverage areas.
· Finds appropriate coverage if a staff member calls in sick, if necessary, they will cover the section themselves
· Carries out general cleaning duties and routines, including scraping, washing, stacking and storage of dishes
· Responsible for maintaining the Main Floor Dining Room, 2nd Floor Dining Room, Bistro/Café areas, and other areas as required in a tour ready manner
· Practices and maintains established standards for cleanliness and sanitation throughout all aspects of food preparation and service as required by the Health Department
· Will supervise the front of house, in the absence of the Executive Chef.
· The Captain Server is responsible for training and on ongoing monitoring of front of house staff for retraining on the Serving Program and all included topics
· Is an integral part of orientation as well as training all new front of House Staff, ensuring that they are familiar with the department and the homes policies and procedures.
· Promotes and tracks a la carte and wine service sale in accordance with prescribed procedures
· Complies with all provincial regulations, established food and beverage department policies and procedures and ORCA standards to ensure the department is tour ready.
· Performs other duties as assigned
Health and Safety
· Advises supervisor or designate immediately of all staff incidents that may result in an Occupation Accident Claim, any concerns with the physical plant, incidents or injuries and completes required reports;
· Follows all health and safety policies and procedures. Works safely to reduce the risk of injury to self, co-workers and Residents;
· Wears personal protective equipment as designated;
· Maintains a clean, safe environment for Residents utilizing infection control principles;
· Maintains a sound working knowledge of their role & responsibilities during all Emergency situations when working different shifts;
· Participates in drills to prepare for emergencies and attends all education sessions in relation to emergency preparedness.
· Maintains all records for Health and Safety as well as Infection Control as per policy requirements.
Qualifications: Qualifications:
· Minimum Grade 10
· Possess a valid Smart Serve and Safe Food Handling certificates;
· Experience with Training and Development of new and existing staff;
· Must have an excellent command of verbal and written English language skills;
· Ability to work independently and/or as a member of a team;
· Proven experience with communication for purpose of productivity of staff member;
· Experience working with seniors and knowledge of the aging process an asset;
· Proven customer service skills
Activity Performed Requirements & Frequency of Activity:
Walking: Walking required on level surface throughout shifts. Walking on wet/slippery areas occasionally
Standing: Standing on feet throughout most of shift, up to 8 hours as a major job function Standing on hard surfaces often during shift
Lifting/Carrying items/loads: Carries and transports objects of various sizes to a maximum of 25 lbs. (5-15 lbs. usual) as major job function. Lifting from floor to waist or waist to above shoulder level ongoing throughout shift
Bending/twistin & stretching: Stretching/reaching on a regular frequency throughout the shift a major job function. Bending/stooping on a regular frequency throughout the shift, as a minor job function. Crouching/kneeling for short periods of time as minor job function. Pushing/pulling, using wheeled equipment such as carts, trolleys with contents that weigh a maximum of 100lbs.
