The Director, Food and Beverage is a senior role responsible for delivering the highest quality food and beverage offerings & conference experiences that consistently exceed guest expectations. The incumbent will drive results in a busy and dynamic environment that operates 365 days per year and includes both indoor & outdoor venues, restaurant and bar outlets, servicing over 100,000 covers annually, three seasonal food courts, serving over 200,000 transactions annually, a licensed Starbucks serving over 130,000 transactions and over 92,000 sf of conference and event space servicing hundreds of groups annually. The Director develops strategy, establishes standards and targets in addition to sourcing the resources required to successfully complete objectives. The Director will coach and support subordinate leaders as they operate their business units. They consistently exhibit an entrepreneurial spirit combined with a creative and intuitive nature that drives continual process improvement, new and innovative products, and world class service standards.

WHAT WILL I BE DOING?

Key Duties and Responsibilities

  • Inspire exceptional guest service in all Food and Beverage operations by establishing and maintaining an outstanding and competitive standard for attention to detail, creativity, and passion for the Blue Mountain food service & conference offering
  • Actively leads Employee Engagement & Guest Satisfaction initiatives across departments while maintaining alignment with resort and ALTERRA principles
  • Remain current with Food & Beverage trends with an eye to identify opportunities, new products, collaborate on food & beverage offerings as well as expand conference culinary & service packages.
  • Develops strategy, marketing plans and operating budgets for each business unit and proactively monitors performance to ensure that operational goals are achieved. Ensures that all standard operating procedures for revenue and cost control are in place, utilized, audited, and improved as needed.

Decisions and Problem Solving

  • The Director will be expected to influence and / or oversee all decisions surrounding: 1) outlet repositioning/development and new concepts, 2) menu creation aligned with service concepts, brand and market drivers, 3) staffing needs, training, orientation, development and performance management, 4) culinary standards of production and efficiency.

Budgets and Funds

  • The Director is responsible (in conjunction with finance and FP&A) to develop and implement reporting and oversight procedures in a timely manner. Use of daily, weekly, monthly and quarterly reporting, in conjunction with detailed analysis is required to achieve continual process improvement goals.

Communication/ Influencing Others (Contacts)

  • The Director’s skill and abilities must allow for concise & consistent communication within their division and across the resort. They will be expected to inspire and motivate their internal teams with this skill and motivate others outside their division to be ambassadors, supporting and promoting the accomplishments and offerings of the Food & Beverage division.
  • The Director will work closely with the marketing department and public relations team to further enhance the food and beverage offering and brand experience.
  • The Director will effectively maintain relationships through meaningful dialogue and partnerships with people and organizations outside the resort

Supervision Exercised

  • The Food and Beverage department is dynamic as operations ramp up and down with the change of seasons. Recruitment is a constant exercise as there are approximately 225 front line supervisors & associates during peak winter months – 50% of which are seasonal hires.

WHAT DO WE NEED FROM YOU?

  • A minimum of 5 years’ experience as Director, Food and Beverage in a full service, multiple outlet hospitality environment with high volume conference operations – brand experience would be beneficial but not required
  • Bachelor’s degree in hotel administration, hospitality management or related discipline preferred
  • Demonstrable in-depth knowledge of food production, kitchen operations, purchasing and inventory methodologies.
  • Extensive and proven experience with multi-million-dollar budget planning, P&L analysis, forecast methodologies, menu & recipe creation, menu costing and cost control measures
  • Firsthand experience with new openings, concept creation, and outlet repositioning is preferred
