The Food Services & Hospitality Manager main point of contact for Food Services and Accommodations and Janitorial requirements. Responsibility to the Contractor Site Manager (CSM) for the successful execution of the contractual requirements of these sections. The Food Services and Hospitality Manager will have responsibility throughout the contract to provide exceptional meal services, accommodations and janitorial requirements and all related duties. Duties and responsibilities include but are not limited to:

  • Responsible for the provision of meals using healthy recipes in a cafeteria style self-service style 365 days a year
  • Accountable for the compliance and use of the 4-week cycle and 1—day cycle menu provided by DND
  • Establishing and implementing food preparation schedules for all staff and recipes, creating an efficient and organized process for each dish.
  • Planning, preparing, and/or directing the preparation of all meals in the kitchen, including boxed and hot dispersed meals and review of the food preparation processes.
  • Implementation of the Food Safety and Diner Care Quality Programme
  • Responsible for the weekly food orders and annual forecast including; listing of non-perishable food, non-food material, and replacement of equipment required to operate and maintain the kitchen.
  • Participate in frequent meetings and discussions with DND and CFS Alert representatives
  • Implementation of receiving procedures and perform receiving of food supplies and storage in accordance with references for: dry goods, frozen, and chilled food supplies.
  • Operation and Maintenance of all kitchen equipment in accordance with instructions and procedures.
  • Training staff on quality, health & safety, sanitization and safe operation of equipment
  • Responsible for the coordination and oversight of accommodation and housekeeping staff and service requirements for the station
  • Coordination of general, miscellaneous, minor and major cleaning.
  • Provision of inventory reporting on food supplies, accommodations, and janitorial items.
  • Monitor the quality and adequacy of performance to contract requirements through formal weekly and monthly activity and operational reports.

EDUCATION REQUIREMENTS

Degree or Diploma in

  • Red Seal Certification; OR
  • Certification in Hospitality Management
  • Safe Food Handling Training

WORK EXPERIENCE REQUIREMENTS

  • Must have 5 years’ experience in managing a multi-faceted food service operation in an institutional environment or a similar, or great scale to CFS Alert
  • Experience in the overall control of food services support including food procurement and financial control.
  • Experience in the day-to-day management of meal production, meal service and other related tasks within the kitchen
  • Experience in training in sanitization, quality control and client care
  • Have 10 years’ overall work experience

SKILLS, ABILITIES, AND OTHER REQUIREMENTS

Intermediate knowledge and understanding of:

  • Contract management
  • Financial statements – read and comprehend
  • Applicable local and provincial labour codes
  • Managing / leading union and non-union staff
  • Business operations processes
  • Organization and time management

Intermediate user of:

  • MS Office (Word, Excel, Outlook)
  • JD Edwards or an Oracle-based ERP system
  • Must be eligible to receive and maintain Level II (Secret) security clearance through Canadian Industrial Security Directorate
