Responsibilities & Tasks
Plan, organize, direct, control and evaluate daily operations; Balance cash and complete balance sheets, cash reports and related forms; Enforce provincial/territorial liquor legislation and regulations; Monitor revenues and modify procedures and prices; Negotiate arrangements with suppliers for food and other supplies; Develop, implement and analyze budgets; Set staff work schedules and monitor staff performance; Provide customer service; Train staff in preparation, cooking and handling of food; Maintain records of food costs, consumption, sales and inventory; Create new recipes; Analyze operating costs and other data; Prepare dishes for customers with food allergies or intolerances; Plan and direct food preparation and cooking activities of several restaurants; Plan menus and ensure food meets quality standards; Estimate food requirements and food and labour costs; Arrange for equipment purchases and repairs; Consult with clients regarding weddings, banquets and specialty functions; Supervise activities of specialist chefs, chefs, cooks and other kitchen workers; Demonstrate new cooking techniques and new equipment to cooking staff; Instruct cooks in preparation, cooking, garnishing and presentation of food; Requisition food and kitchen supplies
